Our Guatmalan coffees come from the Lake Atitilan area. This coffee is grown on the flanks of the volcanoes surrounding the lake. All the coffee is classified Strictly High Grown (SHG) and is grown over 1500 meters above sea level. This coffee is grown and processed by a collective of over 100 farmers. The majority of the coffee is grown under shade trees, and other farms are converting back to the use of shade trees after 20 years of erroneous advice from Guatamalan Agricultural agencies. After watching tons of topsoil wash down into the lake, nearly all farmers have reintroduced shade trees to prevent further erosion. This coffee is a classic fully-washed, sun-dried arabica. It is medium-bodied with above-average acidity, a bright sweet cup with a slightly floral background. Certified by Quality Assurance International (QAI.)
Our Guatamalan is a medium roast with a light flavor and low acid.
